20 minute bolognese for dinner

Not everyone has all of the time in the world to cook dinner, and often times I find myself coming home from the gym after a long day, still wanting to eat something healthy and tasty, but without much time or energy to do so. That’s where I strive to cook something like this, quick, easy, tasty and healthy.


Ingredients

  • 200g uncooked pasta

  • 300g 97% lean beef mince

  • 100g frozen vegetable mix (carrots, onions, celery)

  • 100g tomato passata

  • 25g tomato pure

  • (optional) low fat cheese for topping

Seasoning

  • Italian seasoning

  • Oregano

  • Salt, pepper

Method

I start by browning off my beef in a pan. Once that gets started, I add my pasta to a pot of salted water.

When my beef has gotten some color, I add in my frozen vegetables and let it cook down for 5-6 minutes.

I add my tomato passata and tomato pure and let it cook down. I add my seasoning to taste.

I drain my pasta, but put some of the pasta water off to the side in case I need it later.

I mix in my pasta, and add pasta water until the sauce is to the consistency that I like.

I divide it into 2 portions and top with a little bit of low fat cheese.
